Rainbows & Toddlers

I decided after a huge first birthday, Ainsley in ONEderland, to bring it down a notch for her second birthday. But I still wanted the cake to be AWESOME. And I had limited funds. So after seeing some adorable rainbow cupcakes I looked up Rainbow Cakes and decided on this one. 

I didn’t have time to make the cake & frosting homemade so instead…

Here is how I did it: 

2 white cake mixes

used red/yellow/blue Wilton gel colors for my 6 colors ROYGBV> red, orange, yellow, green, blue, violet

added Wilton almond flavoring to the cake just in case the gel flavor was strong, it wasn’t!

made yummy Wilton’s buttercream for the inner layers and crumb coating with almond, butter, vanilla flavor

used a box of Wilton’s Whipped icing for the outer layers and medium round tip for edges

IT WAS GREAT!

I made the batter, added flavoring, weighed it and separated into 1.5cup increments, dyed it. Then baked each layer 15 minutes at 350 degrees f.

After letting it set out and cool overnight, I wrapped it in wax paper and plastic wrap and refrigerated it for 2 days, until I could make frosting and frost it.

Then I used a cake level to make each level compeletly level and eating the excess! To taste test! (my mom helped with this precise step!)

I made the buttercream recipe X 2.5 and it still only iced the layers and crumb coat. 

So then I refrigerated it overnight and frosted with the whipped icing the next morning. IT WAS PERFECT!

We had the party at a local kids gym, Youth Fitness Zone, and everyone had a blast! I definitely would recommend making the cake a few days ahead of time.

RAINBOWS make everyone happy so this cake was a perfect fit for us!
